I have always packed our clothes in plastic bags - gallon size for those smaller articles of clothing, and hefty makes 2.5 gallon size zipper bags for his linen pants. We've never encountered the water issues candtdesire07 describes, I do it to make more room in the suitcases (sit on the bags and zip all the air out) and our clothes stay pretty much wrinkle free if you take care when putting them in the bags. It also helps at the airport if your weights are off in your bag - just pull a ziploc bag or two from one bag and move it to the other, no embarrassing articles of clothing falling out. It never fails that when leaving Cancun there are multiple people standing by the scales with their bags open pulling shoes and clothes out one by one to make the weights balance - its pretty comical. And what a mess they end up with (most seem to start with quite the mess, so it probably doesn't bother them too much)
Just be sure to unpack the ziploc bags, or at least open them early on. Never not opened the bags, but I would imagine things could get a little musty if some moisture got trapped inside. Same in reverse for packing items up as they get dirty, unless you are there for a short stay I would wait til the day before you leave.

(They also come in handy if, by some unfortunate circumstance, you need an ice pack or a heating pad - the lobby bar will fill one with ice, or pour scalding hot water onto a towel that you can seal in the bag)
