Carajillo @ Desire Pearl

My last trip, i got turned onto a Carajillo drink after dinner. It has liquor 43, and some espresso and Desire Pearl puts a cream in it, but i don't know what it is. Does anyone here know? I was on LIquor 43 website and several recipes, but none included a cream. I assumed it was just milk and i still think it is, but thought i would ask.

I'm hosting a girls day this Sunday and I want to make it for them to try.

Thank you in advance!

Erm... did you read the OP? Seems like your response is kinda tone deaf.

I'm not being facetious, aggressive or obtuse.I seriously don't see what is wrong with the response.

Literally from the wiki link they posted:" Mexico carajillos are usually made with espresso (or some other type of strong coffee) and "Licor 43" – a sweet vanilla-citrus flavored liquor – and poured over ice on a short glass. It is commonly drunk as a digestive after meals."

So thats the classic Mexican interpretation. The OP seems to be looking for a cream/milk additive. As with every drink thats recreated by every bartender there are personal spins put on a recipe. And I think the OP is on the right track thinking that it may be a cream/milk additive.

For the OP. Instead of just using cream or milk, blend some a coffee liqueur (I'd go with Tia Maria) into some heavy cream as the final additive.

I think she was specifically asking about what the cream component was. Seemed she was very familiar with the traditional recipe...

Um yea....LOL, so totally get the original recipe. Was wondering if anyone that like these knows first hand how they make them at Desire Pearl. I got milk i'm going to add, but was just wondering what they added specifically at Pearl. Yea, bartender's always put their spin on things LOL.....Pearl has some good ones too.

Thanks all.

Unless we have a Pearl bartender in the house, you may be left to your own devices.

Thats all well and good. You deciding someone's response was 'tone deaf' was off-side. Regardless of how smart you think you are, try and put yourself in everyones position.

It wasn't Off Side, it was a Neutral Zone Infraction. Same penalty (5 yards), but different reason. Off Side is when you line up and violate the line of scrimmage by the nature of where you line up.

Hope this helps! Go Phins!

(wait...what do you mean it wasn't a football thread?)

You sure it wasn’t a Barraquito? It’s similar to a carajillo but has a layer of condensed milk (which looks like cream when scooped):

These both look amazing. Are both of these drinks available at Desire Pearl?

Following this closely. For anyone @ Pearl right now, can you please ask Eddie or Juan what is the cream component they put in the Carajillo? Eddie gave us our first introduction to this drink last month and we were hooked. I don't specifically recall a cream component to it when it was made for us, but I definitely do remember espresso, 43 and TM or Kahlua.

Best answer will be directly from the bartenders. I am going to assume some current guests look at these boards.

I was at Pearl 2 weeks ago and can confirm that they have the Carajillo at Aphrodite as I ordered it each day at lunchtime.

Boots on the ground at Peal now. Just confirmed with Juan (who remembered this specific variation) this it was simply cream that was added to the normal Carajillo! Who knew!
