Is Canadian dollar accepted in Cancun ?

I haven't tried. I have always taken US, and even then I get a bit of a bad look. I would take both Peso's and US dollars. Take a bunch of one dollars for tips, or 10 Peso's instead. I would hate to see you get down there with Canadian, and see you turned away at the till.
Remember, you can use your debit card at most places, lots of ATM's around, and you can use your credit cards as well. Just make sure to let your bank(s) know when and where you're going. Otherwise they may stop all usage on the card.

The short answer is no not really

Some resorts, the banks and the cambios(money exchange places) will convert Canadian$$ into Pesos but the conversation rate they use is just plain robbery.

Far better to covert Canadian $$ to Peso through your local bank while in Canada

The reason I asked is because the taxi company says they accept Canadian Dollar and it is 1:1 USD.

Yep, If you are using USA Transfers they DO accept Canadian $$ on par with US$$
- one of the very few companies in Cancun that does
- btw the owner of USA Transfers is an expat Canadian that lives in Cancun.....
