We don't do late night pizza simply because we go for dinner quite late. I believe, however, that there is something available close to the lobby bar.
As for pool chairs... this is an interesting topic. We are not members and in the 22 days that we have stayed at Pearl we have never had a problem getting a chair on the active side. Not once. However it also is important to us (read: me) so I put some effort into it.
The first thing to do when you arrive and come down to the pool is find one of the guys looking after the chairs. Communicate to them what you want and how long you are staying. They may not have a chair open that day but they have a list and can tell you when one will be available. When you get your spot and it is acceptable let them know. Ask them each day whether it will be available for the next day and make sure that they know when your last day is. They will add it to the list so that when you arrive in the morning it has been reserved. Tipping, by the way, is a good idea.
If it isn't on the seating map that they keep then you can have a problem. They rotate three guys for the job so one day Viktor might have the early pool shift and the next it will be someone else who doesn't know who you are.
To make things easier for them come down to the pool as early as possible. Bring some items to leave on your chair. The last thing the pool service guys want is to tell someone that a chair is taken and then have it sit empty all morning. They might put a book or hat on it in the morning but someone might see that the chair(s) isn't being used and put their stuff down. Then if you drag yourself down to the pool at lunchtime and complain that 'your chair' is occupied the pool guys are put in an uncomfortable position. I had a chat with Javier about this last December and it really is a big deal.
The bottom line is if you use a bit of consideration, communication, and thoughtfulness getting a chair for your stay at Pearl really shouldn't be an issue.
