The one time I was at the resort and went to talk to them about an additional night, they stonewalled and said they would absolutely not allow a one-night booking (it was a holiday and high-occupancy), so I went on online and booked with a coupon for less- their loss! One thing to note is that while the resort won't directly book just one night, most online travel agencies will do so and the resort honors those bookings. It's quite likely the resort will change your room if this happens; just pack up your bags and they'll move them to your new room during the day.
Two options I'll suggest:
1) If there's still availability, see if you can make a new booking for the total dates you want and cancel the old one after you secure the new one. This allows you to use any booking channel you want and keep your room the whole time.
2) Use a travel agency to book a single night.
